Squash Delight. . . At least that's what my Grandma would call it, but I think she calls anything with squash in it squash delight!
MMMM, I love fresh food! And we have new potatoes, squash, onions, and fresh pork! Here is what I make with it. . .
John likes a little fresh raw onion with is, I like a fork and a plate full! It is yummy and quasi healthy (real butter IS good for you!)
Squash Delight
4 tablespoons butter, (plus a little extra if needed)
4 new potatoes, diced fairly thin
1 medium size onion, diced
1 medium size squash, diced
1 ham steak, diced
salt & pepper to taste
Melt the butter in a large skillet, add the potatoes, and add salt & pepper, cook until they start getting tender, then add the onion. Cook the until the potatoes are almost done and add the squash, stir it around a little (add more butter if it's to dry), then add the ham and cook until the ham is hot and the other part of the mixture is tender and a little brown.

Start with a few new potatoes, an onion, a squash, and some ham steak, oh and BUTTER!
Melt the butter in a skillet (If you do not use real butter I will hunt you down and force a stick down your throat so you know how good it is)
Add the diced new potatoes and a pinch of salt and a few grinds of pepper and cook for a couple minutes (potatoes take the longest to cook)
Then add the onion and cook a couple more minutes
Yep, the squash is next
Add the ham and stir it all together and cook until the ham is hot. Pour it on a plate and eat!!!
