Potato Soup

Because it's raining and the weather is cool. . . . I just had a giant bowl of yummy potato soup!  Sorry there are no pics, I had to eat it, it was calling to me, "don't wait eat the soup."  So, that's why there are no pics of the potato soup.
But here's how you make it. . .

5 slices of bacon, diced
1 medium purple onion, diced
6 medium potatoes, diced
1/2 pkg cream cheese
1/2 stick butter
1 cup sour cream
Milk
Salt/Pepper to taste

In a medium sauce pan cook the bacon, do not discard the grease, toss your onion and potatoes in the bacon/bacon grease.  Add enough water to cover the potatoes and cook until the potatoes are tender.  Pour the water off and added the cream cheese (you can add more if you want), butter (you can add more if you want), sour cream, and enough milk to cover potatoes, oh and salt and pepper to taste.  Cook on low until everything is melted and hot. 

Put a few crackers crunched up in the bottom of your bowl, a bunch of shredded cheese, and top it with a couple scoops of potato soup, then a few sprinkles of shredded cheese on top for looks. 

Then put the spoon in the soup and eat up!!!!!!!
